Green Bean Special

I'm still picking quite a lot of green beans from the garden, so I decided it was time to think what else I could do  with them, apart from the usual options.  Looking in the fridge to see what other garden produce was there, I came up with this original (??) recipe. 


I put a small dollop of butter and a little olive oil in the bottom of a saucepan; no, I did not measure either of these!


I then added:-

1 sliced medium onion
1 sliced green pepper
1 small chili (optional)
A double handful of green beans topped and tailed and cut in half
1 yellow courgette (zucchini) sliced.


I cooked this all lightly for a few minutes then added:-


1 chopped medium to large tomato
1 heaped teaspoon of curry powder
salt and pepper to taste


I put the lid on for 5 minutes, stirring in the middle of the time.  The vegetables were still quite crisp and I then added 2 good size dollops of creme fraiche and cooked for 1 minute.


I quite enjoyed the dish hot, but cold as a salad it was absolutely delicious.
Enjoy-  and soooo easy!

    We absolutely love green beans but, for some reason which is totally unclear to us, they are only rarely available in our local market in Budapest. Your inventive salad sounds delicious and how marvellous to pick, prepare and partake, all in a morning!!!

  4. Jane and Lance, I wonder why they are so difficult to get in Budapest! The one thing I love with my vegetable garden is to be able to pick and eat all fresh from the garden. The weather this year seems to be causing everything to last much longer than usual. Have a good day. Diane

  5. I remember when I had a green bean glut in my garden... always trying to come up with something to do with them. This is a great recipe... love the curry addition... I miss having a garden when I read your posts!!

  6. lostpastremembered I have also bottled a whole lot of curried beans this year so we have some reminders of summer in the middle of winter :)

  12. Gaelyn there is always masses of tinned green beans in the supermarkets here but I have never seen them with dill. Maybe I will try my own next year :) Diane

Today I picked the first pound or so of green beans from a new sowing which we put in at the end of August. They look as if they are going to be heavy croppers too, so I'll be needing your recipe over the coming weeks. Keep them coming, Diane. It's great to get fresh recipes to try!

This is great cooking - it seems simple and "invented" but in fact it's the sort of thing that only a skilled and experienced cook can do successfully - even though it sounds as though you just threw it together at random - an instinctive knowledge of what works is what you need to produce something edible.

  34. Dzoli we only ever see butter beans in tins, I have never seen them growing. Perhaps they grow better in a cooler climate like New Zealand I don't know. Have a good day. Diane

  40. We call them squeaky beans and are a favourite vegetable. Curried adds a another favourite taste.

    Also, I have all of these ingredients in the fridge so we'll try it tonight!

Hi Diane I had a peek into the future - via the Richtersveld .. that will be wonderful for you - I think we'll all be desperate for rain shortly .. it's incredibly hot here .. can't see it doing any good for the general environment - though some things are thriving .. the grapes! & olives for you I guess. Lots of berries too .. just hope it's not cold later on .. otherwise I'm on way south to a wonderful fire! Cheers enjoy the garden at cooler times .. Hilary

  52. Hilary the birds have had this year, no berries. The earlier drought put paid to all of them. Grapes are harvested and we have no olives.
    Depending on what weather forecast I look at I can't see into the future LOL. One says rain and cooling down next week, while the other says that this weather will continue. I guess one of them has to be right but which??? Diane

  60. What a lovely combination, and the creme fraiche must finish this dish off beautifully. I'm just thinking about what seeds to sow for summer - slim round green and yellow beans are definates.

    Just to confuse everyone: over here the slim,round green beans are known as "french beans", and their yellow counterparts are "butter beans" - plus we can get the big, fat tinned butter beans in tins too. I guess I'd better not start on what we call "chips", lol .....

  61. Wow that looks absolutely tasty Diane! Unfortunately I am not fond of curry so I might try your recipe without it hehehe. We have a dish called Adobong Sitaw (beans) in the Philippines and my husband and I love it when I make it here. You can check it out here and here, you might like it. The recipe is very easy to make. Promise no measuring, I am not fond of measuring ingredients in the kitchen hahaha. Have a nice weekend!

  68. This is a little different and sounds really good to me. Thank goodness it's not the "traditional" green bean, mushroom soup and french fried onion recipe that's served here around the holidays. Maybe mushrooms would be good in it also.

  76. Rosebud due to lack of freezer space this year I have bottled whole beans, still need to see what they are going to be like! Also bottled lots of curried beans which I am sure will be fine. This dish was very yummy. Diane x

  78. Sam this just happened because of what I had in the fridge from the garden. You could vary the vegetables to suit your taste, Pam suggested mushrooms which sounds good to me but my garden is minus mushrooms this year!! Take care, Diane
