Apple Cobbler

Having been housebound for the last couple of weeks due to the ice-covered roads, the normal exploring and photo-taking activities have been on hold. We have also not tried any recipes worthy of passing onto our faithful followers, so this is a recipe from the archives which I hope you will enjoy.


APPLE COBBLER QUICK AND EASY

Ingredients
8 medium apples, peeled, core removed and sliced ( My apples were all fallers, so they were not perfect. Good apples; probably 6 would be enough)
1 cup sugar
1 cup orange juice
1 tablespoon lemon juice
3 tablespoons butter
3/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup milk

Method 
Combine apples, sugar, orange juice and 1 tablespoon butter in a saucepan, bring to a boil. Cook until apple is soft.
Meanwhile combine flour, salt and baking powder, stir in milk slowly mixing all the time, then add remaining butter melted separately.

Combine the batter and the apple mixture mixing well and pour all into greased baking dish.

Bake at 190C (375F) for about 30 minutes or until batter browns and rises.


There is no crust on this cobbler, but we enjoyed it. It would taste great with ice cream, cream or custard.

  8. I have found being house bound more an opportunity to catch up with lots of jobs I have been putting off but now I think it is time for Spring! Apple Cobbler is perfect for this sort of weather.

    I don't like apples but i love apple pies and cakes. I will definitely try this one out.

  16. Linda all the jobs I really need to do are outside, I am thinking now maybe I can get on with them very soon. I couldn't even get on with unpacking as all the boxes are in the barn and it was freezing in there. Mind you there is no room now in the house, so I really do need the 3 further rooms we are planning on!! Diane

  22. I find it appalling that millions of pounds of perfectly good fruit is tossed away because it isn't perfect. WHat a waste. HOw good of you to use it and celebrate the use of it... makes a gorgeous dessert!

  26. lostpastremembered, much of the fruit that is thrown out, if cut up is fine afterwards eaten fresh. These fallers had a few odd spots but they were otherwise very tasty. Enjoy your Sunday. Diane

  35. Lena all my fruit and vegetables that are not edible, including all the peelings, banana skins and egg shells go into my compost bin. When broken down they go onto my vegetable garden as compost:) Diane

  36. Froggy I could eat dessert every day but we try to minimise to a couple of days or less. I only have to look at dessert and the scales say whoopee!! I love fruit salad, but it can get a bit boring especially when I see someone eating something more exciting!! Diane xx

I don't think we had this as kids .. but Mum made it for her Old People's Home when she was cook and chief bottlewasher a such - ie Manager .. and continued to ensure it was on the menu when she bought a place ... she was a good cook. This looks delicious - just what we need when the snow and ice is on the road ..

  58. Hilary, I am not sure that I had this recipe as a child either, I just made it when we had too many fallers and there was not really much wrong with them.
    I had more x-rays this morning and have the all clear, problem is I am still coughing, so they need to look for another reason. This has been going on now since I was in the UK in October!!
    Roll on spring and the warm weather maybe that will solve the problem.
