Some Like it Hot - we do !!

SWEET CHILLI SAUCE

I have been blessed with a gigantic crop of chillies this year and decided this is one of the best ways of preserving them.  I have also dried some, and  frozen some more, but freezer space is short, so it is out with the jars!!

1 kg of peeled chopped de-seeded tomatoes (masses in the garden this year)
2 table spoons of grated or finely chopped fresh and juicy ginger
A whole head of garlic, peeled and chopped
18 large red chillies - (the original recipe said 8 but I decided it need more kick!) use your discretion !
4 Tbs of Fish Sauce (Nuoc Mam in France)
600g sugar
200ml of vinegar (I used tarragon white wine vinegar but apparently any sort works)

After peeling, deseeding and roughly chopping the tomatoes, put in a blender.  Blend lightly, then add the ginger and the garlic and blend for a couple of minutes.
Chop up the chillies, seeds and all, leaving the stalks – advisable to wear gloves for this!
Add all this to the tomatoes and blitz to a puree in a processor -
Add the 4 tablespoons of fish sauce.

Put all this mixture into a big pan, then add 600g of sugar and 200ml vinegar
Stir well and bring to the boil.  Cook on medium heat for a while stirring occasionally, as it thickens, turn down heat to simmer.  A small froth or scum will form - skim this off and discard

Keep simmering stirring occasionally.  When the sauce has thickened and reduced, pour into the jars; seal and label.   Best to leave for a month before using. It will probably make about 4 normal size jam jars full. As you can see I am using up whatever bottles I have available!

I might add that my Father-in-Law who says he has lost his taste with age thinks this sauce is wonderful, he can taste it!!!  Beware, très fort (very hot).

  1. I love peppers of all kinds but have never gotten around to canning, freezing or drying. One of the bloggers I follow did all 3 with her peppers. Yours look a marvellous colour and I bet it tastes scrumptious too!

    Well, this looks as if it would blow our socks off...18 chilli peppers..... you really must like it hot. The colour looks wonderful in the jars and a sauce such as this is so versatile when it comes to 'pepping up' a dish!!!

  3. Joyful I have also tried a sort of 'jelly like' chillie this year. I have tasted a bit which I had left over after bottling and I think it is going to be yummy. This sauce I made last year which was fantastic, but we decided to double up on the chillies. I licked the spoon when I finished bottling. MMMMMMM :-) Diane

  6. This sounds just what we're looking for as we, too, have a good crop of chillies. The colour of the finished sauce looks so attractive in those jars. Guess I'm going to be busy tomorrow! Extra brownie points if it's 'blow your socks off' hot! I can see this recipe proving to be very popular, Diane. :~)

  10. Colin and Elizabeth I made quite a bit last year, and we did enjoy it, but doubling up the chillies we though was a better idea :))) The tasting I have had with this years crop is yummy. 11 jars so far, almost one a month we are going to be breathing fire Hehe. Diane

  16. I would love to make this, but I try to stay away from growing chillies and such....I would be too tempted to use it and my husband can't take the heat!

  77. Diane, I find the recipe most interesting and hope to try it out. What I find interesting is the combination of fresh ginger and fish sauce with all of those chillis. I have never made my own chilli sauce and never even looked at a recipe so had not thought about those additions.

    Nice you had known the tree tomatoes in S.A., they call them that in Colombia I learned from the comments, I can't wait to see those beauties growing in my garden!

  84. Hi Diane, I'm on one of my infrequent tours of Quay Po's blog friends. I have one response to the chilli sauce recipe. YIKES! (^^,) Before I came to SE Asia, I had palate that was almost intolerant of chilis. Through the years I transmogrified into a true desciple of "the burn". Still, your recipe makes me wonder if you and Nigel experienced childhood traumas. LOL! I have a couple of questions: Do you or your readers ever consume spicy food to a point of a relatively high level "burn", then, after a bit of revelery soaking it all in, take a sip of hot sweet tea (in Malaysia we call it "teh tarik") to get a sort of explosive burn that is almost dizzying? I would liken it to fighting fire with fire, where ultimately the fire is extinguished, but the explosive heat, for a moment, is heady stuff. My second question is whether other chili aficianados begin to experience gastric problems as a result of spicy foods as they grow older?

  88. Simplifried LOL no neither of us had childhood dramas. Think we have just got to like our food hotter and hotter as years go by!! As we do not drink tea it is unlikely we would ever try your trick. We only drink herbal and with no sugar in it!!! As for gastric problems as you grow older I have often wondered the same thing. Is there a DR reading this who can come up with an answer :-))

  91. Love the idea of canning these Diane. We go back and forth between two homes when the season changes and this would be perfect. Transporting frozen things is not something I feel like dealing with. Plus they are so pretty!

  93. Sam because of the lack of freezer space here at the moment, I have bottled curried beans, and experimented with bottled ratatouille and mixed vegetables. I do not plan on keeping them past winter so I hope it works to tide us over. I agree carrying frozen 'stuff' is a pain if it over long distances. Diane
