I had some stale bread lying around and a few cherries from the garden, so I wondered what I could come up with for a pudding, and this was the result.
Cherry and Bread Pudding
Note. All quantities are approximate, as I just threw things into this dish as I made it!!
About 3 thick slices of stale bread, broken into pieces
About 2 cups of de-stoned fresh cherries
56 grams (2 ozs) butter
2 tablespoons brown sugar
1 cup milk
1 cup crème fraiche (I am sure 2 cups of milk would do instead, but I was low on milk and had plenty crème fraiche!)
3 eggs
1) Put the bread into a pyrex dish and mix the cherries in with the bread.
2) Chop the butter into small bits over the top and sprinkle the sugar over all.
3) Beat the milk, crème fraiche and eggs together and pour over the mixture. Push the bread down to make sure it soaks and allow it to stand for about 10 minutes before putting it into the oven at 180C.
I have a fan oven and I cooked it for 40 minutes.

I did eat some while it was hot with a little crème fraiche on the side, but I actually much preferred it at room temperature; the cherry flavour was much more distinctive.
Will I make it again? No doubt about it, it was delicious.
I have tried it again this weekend with frozen cherries - it just did not taste as good, so it seems as if fresh is the best answer.
As I said previously, I will have visitors for most of June, so I will visit you all when I can, but time will be short!
